As soon as I move the joystick, it just goes to the extreme of a direction and stays there. I can't do anything with it.
I ran the calibration and it's now very roughly controlling in correct directions, but it's totally unstable and shaking a lot.

Joystick: MS SideWinder Precision Pro USB
now it's working. i had changed some dosbox.conf variables when i ran the calibration but when i changed them back and ran the calibration again it then worked.
