I suspect the the answer is no, but I figured it wouldn't hurt to ask - is there any way to get better than the "default" music and sound effect quality in Wing Commander 1 without going down the route of MT-32 emulation? I.e. can I just change MIDI device in DosBox settings or something like that?

Just curious as it seems that setting up the MT-32 stuff requires jumping through a few hoops, and was wondering if there's a quicker/easier compromise before I bother with that.

Nevermind, just answered my own question. Found out that DosBox apparently doesn't process/emulate MIDI itself, it's just passes it through to the main OS. To that end you just get whatever default crappy MIDI synthesizer Windows uses.

Getting better MIDI quality relies on installing different MIDI synthesizers. If I have to resort to that anyway, I might as well just do the work for the MT-32 emulator.

Yep, MUNT works usually well for MT-32 emulation. Alternatively use BASSMIDI, which integrates flawlessly into Windows and is an easy way to substitute Window's standard MIDI synthesizer.
