I'm playing the GOG version (no patches).

Does anyone know which files I would need to copy in order to backup my saved games?

I can add, there are ten of these (up to GAME09.U7) for both parts of U7, where the second number reflects the slot in which the game was saved. To the best of my knowledge renmaing in case a slot is already used does work.
