I am thinking about switching to Linux. I'm fine with the idea that the newest games won't work on my PC but I couldn't be without some of these older classics, would GoG Thief 1-2 work on Linux, Ubuntu?

Yes, both games should work through Wine. But keep in mind, that GOG's versions are patched with community enhancements like the New Dark engine. You might have to tweak the installation a bit until it works in Wine.

You can check the Wine AppDB for games that work on Linux using Wine.

actually, since thief 1, 2 and system shock 2 were updated with new dark they run FAR better in wine than before. sometimes there are some hickups with the GoG installer in wine but the games should run fine.
