I have just started playing The Witcher 3 on Xbox One.
Currently, the minimap shows everything and not hiding anything.. Is there a way that the mini map will show a dark fog over the places I haven't been to that needs to be discovered?
Any other tips for a beginner?

In game go to 'Options >> Video >> HUD Configuration'. Hide anything you don't want to see on the mini map.
I don't see an option there of turning off undiscovered places. There's an option to hide undiscovered POI that I have no idea what it is but the entire map is still visible.

You cannot hide the map, you can only hide map cues and markers like Points of Interest (POI), quest markers and such. Assume that you have a map in your (Geralt's) hand. It's not blank paper (FOW), but neither does it show you what's going on.
