Apparently all the saves from Witcher 1 have been saving to OneDrive, and I don't want them to save there. What would be the correct path to keep my saves on my hard drive, and still be able to load them in the game?

The problem is your User\ Documents folder is set to OneDrive.
You need to google how to put it back to your local drive.
It's not a simple process.

No really difficult at all:

In onedrive, to save files to your computer by default, go to File > Options > Save > Save to Computer by default and choose a folder inside your own user account.
