Unfortunately, no. The game takes the view that if it is too hard for you, then [I]git gud, scrub[/I]. Frustrating as it is, your only option is to persevere and keep beating your head against the wall until the wall breaks. Or you give up in frustration, which I consider a perfectly understandable reaction.

And it's still one of the [I]easier[/I] Soulslikes, as hard as that might be to believe. Note that I did not say easy. Because it isn't.

Can you give yourself items that could serve as some kind of difficulty setting? Something that permanently raises base damage, health or protection or if not just good armor and weapons? With a console command maybe?

It clearly says that it's a Soulslike game, which explains it all- it's either "die" or "survive and move on".
