Worldtraveller: I believe 3 was just released, so I wouldn't expect it to be here anytime soon.

Star Wolves 2 was out in 2006, and to this day is still pretty much crappy. Broken missions, crashes, ect. For the most part, I would recommend just staying away from it.
Star Wolves 3 on the other hand came out in 2010, and is fantastic. It takes everything you liked/loved in SW1 and improves it, as well as giving you tons of freedom to roam and explore (finding secrets/hidden caches is awesome), and to boot, there are several different story plotlines to follow, increasing the playabilty greatly. Not sure why GOG hasn't been able to work something out to bring it here yet, but hopefully they will in the near future. In the meantime, I just checked, and it is still available on Gamers Gate (if you want it DRM-free)...though you may want to wait for it to go on sale. That's where I picked it up.
As well, there are some great fan made mods for SW3 which greatly increases the play time as well. Just visit the
Star Wolves Forum , and although the community there is not as active as it used to be, searching through the threads can usually yield answers to most questions you may have.
