Does anybody know of a way so you don't have to calibrate your joystick EVERY TIME you start the game?

Nope, most games at the time didn't save calibration data.

However, some joysticks with their own mapping/calibrating software seem to ignore game calibration in favor of the one done via said software, I discovered it by mistake with my new one.
