That's on GOG, Offline Installers have to be created manually, and usually that never happened on the weekend.
Devs can push an update to Galaxy whenever they want, but traditionally GOG staff work Monday to Friday
Divinity Original Sin is the most recent often updated new release, and though 3 or 4 patches dropped on Galaxy late Friday/Saturday, only one got a manual patch before Monday, and during a big sale one was Tuesday.
So if you insist on waiting for the manual patch, you've got to wait for GOG staff to make it.
I in principle detest Store clients as much as anyone, and would never usually suggest Galaxy as an option, but if you need a specific bugfix, it can be used as a emergency alternative, if you don't want to wait.
One of the main objections, I had to Galaxy on it's release, was It wouldn't accept existing install unless they were in the "GOG Games" folder, now it accepts your custom locations, so you can update with it, if you want, and still get the installer when it appears.

Wouldn't you know it, I just bought the game, got the game installed with Final v2, and GOG updates manual to v1.04
No patch though, it's the full game, which is annoying for those with poor internet.
