Is there a way to change the difficulty/arcade level of the game in the gog version. I have the original game on cd and it allowed you to change these options.

Yes, but first you'll have to download and apply this patch to convert the game from UK to US version:
https://www.gog.com/forum/realms_of_the_haunting/transformation_patch_uk_us_version
GOG presumably didn't have the rights to the U.S. version of this game (as well as others like Normality) so it's not included in their release by default.
