And, in a post in the Old News section, Jagger explains how to get a much larger visibility of the tracks:

Heyo guys and gals, I have the explanation of the Alt F7 rez change stuff. Star F. was kewl enough to explain it to me, and then I had to ask him if I could quote him (cuz I don’t like being a jerk by not getting permission), and he said yes, so..

“ It's NOT 800 by 600. It's what you had before: good ol' 640 by 480. Only that stupid 2.1 starts up with 512 by 384. Press Alt-F7 once, get 640x480 -- plus automatic viewing distance, that is, popping objects. Have a look at Skyrace. When you're fed up, press Alt-F7 again, get 640x400 -- without auto distance, that is, no more popping. Then once more Alt-F7, get 512x384, also without auto distance. Now, for the trick: just one more Alt-F7, back to 640x480, BUT WITHOUT auto distance -- no more popping, best resolution, same as 2.0.
Got it? If you start up in 640x480, 3 times Alt-F7. If you start up in 512x384, 4 times. Unfortunately, it seems unclear whether pod 2.1 always starts up in 512x384 (or only at the very first call), or if it keeps the res setting permanently
(mine does). Anyway, 640x480 is linked with auto distance. Going through the res cycle turns off auto distance, but restores hi res.”

I tried it out, and it actually works with the GOG version! :)

Unfortunately, it only works for the current race. Every time you start a new race, you have to switch resolutions again. :(

Nonetheless, I have an idea. I might even be able to put up a small program to help make this easier. :)

Just try it out on Skyrace, the view distance is huge!!!!!! :)

Here it is - the POD Automatic Visibility Switcher v0.1 beta! :)

Although this is a rather cheezy solution, it works with the GOG version!

Detailed instructions on how to use it are in the README.

The PodHacks zip in the AVS archive appears to be password locked and the readme does not have the password in it, what is the password? :-\

I should've waited for this before doing all the YouTube videos of the tracks =D
Maybe I'm gonna re-record them anyway, with Full HD 60 FPS, but I wonder if someone can switch the HUD resolution to Full HD first...

DebugErr, that would be awesome, man!! POD in 60fps HD, but without the automatic visibility... imagine what it would be on Arcade! :)
