I'm planning to start P:T. soon and I'm not sure which version I should begin with. How much does the EE change from the original? Does it only add quality of life improvements/fix compatibility issues or does it change the game significantly?

It doesn't change the game significantly. There are some minor visual changes, reworked UI (the circle UI in the original was quite annoying IMHO and it's good that they got rid of it), widescreen resolution support and zoom feature. Some of the new features can be disabled in the menu. There's no new story content that I'm aware of. I suggest that you play the Enhanced Edition. :)

I'd recommend the enhanced edition - pretty much all the "enhancments" can be turned off, so if you want to experience something more akin to the original, you can - personally, I turn the graphical enhancements off, but leave mouse zooming on.

Many of the mods that are available for the original are also available for the EE (I use one that shows the journal picture of any particular NPC whilst you're talking to them).

You can also mod the original to have bigger resolutions/zooming etc., but it's easier to adjust the EE (in my opinion, obviously).

That's exactly what I ended up doing - I've turned off every new feature apart from zoom and honestly it works and looks great. There are also a few nice little QoL additions like autoloot that do not ruin the original experience. Just leaving this message here in case someone has my same doubt and stumbles upon this thread.

There's no shortage of info on what enhancements PST got from Beamdog, and it's pretty much the standard EE package.

Not sure which "new features" you've turned off, it's quite authentic by default, apart from the reworked main UI obviously. Actually quickloot and the so-called "zoom" are amongst the most visible changes.

Oh, and it's sped up too. If you find the slightly quirky animations bother you (especially if it's your first time playing PST in general) you might want to set it to the original framerate before you've played too much (so it doesn't feel too slow).

Also beware, if you've installed the Unfinished Business restoration mod, you probably want to install the Generalised Biffing mod too, lest you're (guaranteed?) to run in a save wrecking trouble at one point (quite late) in the game.

No matter what some might tell you, this game doesn't need any other mods (and never needed too, well apart from the Fixpack obviously but most fixes have found its way into the EE).

This choice popped up once for me out of 4 times of starting a new game. Supposedly, you can control this in the options. In reality, the options do not work. So, if you want the enhancements, pick the EE version. If not, do not pick it.

For those who may wonder "What is not working?" Choose original game, then click to have the world gray-scale on pause. Now, pause and unpause the game. It does not gray-scale.

The command console no longer works, because BeamDog screwed that up. So, if you get stuck somewhere, like I did: you have the item to open the portal, but the portal does not spawn - you are screwed. You cannot use the move area cheat, because you cannot get the ACTUAL original game. You have been sold crap from BeamDog, as have I. I still have my discs and am going to see if I can get them running on my Win 10 computer.

Regardless of what you pick, you have bought crap. It is buggy and they have managed to kill the only work-around there was.

By the way, there's also an Unfinished Business mod which restores a lot of cut content, like more dialogue, quests and NPCs. But I'm not so sure if it's really recommended for first time playthroughs.

I'd say while it probably won't hurt a lot, you'd better give PSTEE a pure run first. Can't hurt really, it's a game for several (or many) runs anyway...
