I've read the manual but can't figure out fencing.

When I defend, do I need to use a parry move just before their hit connects, or do I need to hold down the key to stay "on-guard" or does tapping a parry key set me into an "on-guard" mode.

I can't figure out fencing for the life of me and I have read the manual sections on it.

I normally don't worry about parrying too much. I attack and keep on attacking. If you see your opponent attacking in a certain direction just attack in that same direction and it will cancel out his attack.

Performing the parry happens when you press the button. It has to be the correct party (high / medium / low) to match the opponents attack, so when you see him ready his sword for his attack hit the appropriate parry button (or back off). Once you've successfully parried he will lose his next attack giving you a chance hit him. I haven't played much Pirates Gold! yet, but I played the original pirates extensively, and correct parries (along with appropriate sword selection) are important - particularly if you don't choose 'skill at fencing'. If you do choose 'skill at fencing' you can usually just hammer away at them with a cutlass or long sword and win unless the odds are really against you.
I can't speak for the original Pirates!, but in Gold you can just use the arrow keys--right attack/advance, left retreat/parry. It sounds too simple, butt for the most part it works. Frankly, I don't see the point of the fancier mouse controls, as I win virtually every fight as it is.

As for other tips, if you want to take the enemy down quickly (perhaps because you're low on soldiers), use the cutlass. If numbers on your side, however, you can use the longsword's superior range to take virtually no damage to your person while fighting. You could also use the rapier, but frankly, I find it impractical.

In the original Pirates, *with* Fencing skill, using a Cutlass, relentlessly advancing, and hitting with an overhand blow (the 7 key) over and over works almost every time.
