I can't seem to figure out how to use the quick items. In the game manual it says click on them with the mouse. I've tried double clicking on a item and it moves back to the characters inventory. When in combat these items are available, its after combat that they seem impossible to use. Am I missing something here, any help would be greatly appreciated.

Are you making the click on the game menu? not from inventory menu.
Some items are combat only (like potions),
others, like food, are available all the time.

Single clicking on them in the quick-slot bar (on the main game screen, not in inventory) will work - if they're greyed out, try mousing over one and seeing if it says 'Combat only' in red on the info window

It kind of seems like a shame that you can't use a potion after combat to restore your health. I didn't have a problem with the food. It was the potions that I couldn't get to work. So thanks for opening my eyes.

Potions don't restore health - they only restore endurance (which is restored after combat anyway)
Only the odd ability can restore health (and then not by much) or resting, which restores it fully.
