I intend to run a story-mode campaign - once I am done with my current Normal one - for the flavor.

I'd play as a human Mystic theurge with Nethys as deity. What feats/skills should I pick?
depends on how much RP and what would be your arcane class. you can make pretty decent wizard/ecc theurge. max int 13+wis wizard7/ecc3/theurge10 will give you lvl9 arcane spells. as for the feats spell focus in whatever you will be using is nice. otherwise metamagic is nice to fill the gaps in spell-list for single-school casters. I wouldn't bother with AC if you are not going for polymorphing stuff also theurge is not amazing at it.

TL/DR pure mage pretty much doesn't need feats apart from DC boosting ones.

for RP arcane bloodline sorc is clear winner but it will land you on lvl8 spells at best. on the other hand you will have 1 level free so you can pick up scaled fist for AC and not be made of complete paper. for that one you would want empower and maybe some more meta. maximize maybe, as you don't need reach.
spell specialization is an amazing feat and fits your theme as well

also depends on just how much you want to gimp your RP build

Does Arcane 9th tier beat Divine 9th tier?

What stats should I pick? I'd prefer not to spread too wide.

cleric spells are pretty meh tbh. there are some decent necromancy ones and few ok-ish evocations. from efficiency standpoint I would dump wis to 12-14 and rely on items for for cleric casting later on. that would destroy your cleric DC so logical solution would be to offload all your defensive spells there. if you like cleric route better you can do the same with int. although cleric has more dead levels than arcane does so it would be mechanically a bit worse.

for non min-max option 10/12/14/19/14/10 should do ok as you won't use RTA anyway. 8/12/12/18/17/10 if you want to cast cleric spells naturally. those stats are not optimized as I said. did not drop any stat below a reasonable number.

sorc/theurge doesn't get lvl 9 spells
arcane bloodline at least gets +1DC for free. it's not like you need a lot of wis to cast lvl7 cleric psells. you need 17. so if we count items in you can get away with 11 wis.
wizard does get lvl9 spells. emp sorc is ok if you are real tight on stats. not so good for pure caster as you don't need AC or stats really, apart from 1 main stat you will cast your attack skills from.

I feel like if you were to RP theurge of Nethys lvl 9 arcane spells are super-important to have.

now if you are doing meme-theurge then cleric3/emp. sorc6/T10/monk1 is a solid option.go aasimar, dump everything but wis/con/dex, load up on ray spells true strikes and metamagic. done. can even do dragon forms on the side with transmutation for lulz
