Is there any way to change the graphics settings? Playing right now makes the game chug, but if I could just turn down a few settings it could probably run smoother.

EDIT: Forgot to mention, I did mean Stranger's Wrath.

Your chances of receiving an answer to your question will probably increase, if you tell us which of the 3 Oddworld games available from GOG your question refers to (they all share this Oddworld Series forum) .
swizzle66 definitelly means Oddworld: Stranger's Wrath, as the two previous games are fairly old to not be causing any hardware problems.

However, I add to OP's qustion:
Is there any way to change the graphic options?

The game is clunky and laggy on my laptop, even choosing vsync on/off, different resolutions, fullscreen/windowed mode.
I think there aren't any graphic options other than changing the resolution of the game. At least I haven't found any. There's a config.txt file in the Documents\Oddworld\Stranger's Wrath folder. The only line in there which doesn't correspond to any settings you can change from the launcher is anisotropicon you can try and change that to anisotropicoff. Maybe this turns of anisotropic filtering for textures. Could give some speed gain on low-end hardware. I didn't notice any changes, but it runs fast enough for me either way.
Gotta admit it helped a bit, mate.

Thanks for the help!
You're welcome!
I hope it will help the OP as well.
That worked well, Thanks DoctorGOGgles!
