Thinking of picking this up, do I need to build my own controller? or can I just use a keyboard + mouse or a normal joystick?

The default combination of keyboard keys and mouse are enough. There are quite a few functions that can be rebound to a number of keys.
While you do have the option of building your own physical control panel, it is simply a fascinating possibility, and *not* at all required.
Hopefully, that aids in your decision-making. It has certainly been a memorable experience, since I had begun playing it (while it was 'in-development').
