So today I started NMS again, but it would't load my save but rather start a new game. I check the Savefiles Folder (%AppData%\HelloGames\NMS\DefaultUser) and there are still files from yesterday.

Any Ideas?

Move your save files to another location, boot up game start a new game. Then save it and exit, then take the files your previously backed up and overwrite the new save then try running that. If doesn't work either your save has been corrupted or its a bug.
