I can run the game in VR by right clicking on NMS and then Other > OpenVR, but is there a way to run this without SteamVR? Also when I add it through the Oculus library, it still runs it through SteamVR. If someone could share share their experience that would be great.

You shouldn`t be running it through Steam at all. At least I don`t.
It looks like there is no other option.
It run very nicely on my set up but unfortunately it has to start up via Steam VR.
I know it's shit but I didn't expect any better. I'm happy that it works at all.

I click the No Mans Sky VR in the list in Windows (lower left corner), No Mans Sky VR option.

I have a No Mans Sky (OpenVR). And yes it runs it trough Steam. Weird. Maybe because I started it up for the first time through OpenVR. Anyway, thanks.
