Most of the puzzles aren't too bad. A few might make you think for a short moment.

It does have difficulty settings. If you've played Baldur's Gate or Icewind Dale, the settings are similar.

There are a handful of puzzles in the game, some of which are mandatory, but none of them are particularly hard. A young child could figure them out quite easily. With that said, some of the puzzles are not color-blind friendly. I'm color-blind and have great difficulty distinguishing blue and purple in particular, so those puzzles were quite annoying. I still managed to solve the color puzzles by just guessing where the pieces go; they really are that simple.

Depends entirely on the module you play. The Paladin series, for example, has some of the best puzzles I've ever seen in any game. There are many other amazing puzzles in other custom mods as well -- but you won't find anything spectacular in the official Bioware campaigns.

If you want an explanation of the "difficulty settings" you can see them here, but in general it's not like most games where you have easy/medium/hard type settings. The settings here literally change how the game words. Most people play on "DnD Hardcore Rules" which simply means "Spells and effects work exactly like they say on both PCs and NPCs." There's nothing "hardcore" about it.

Generally speaking if you want a harder difficulty you need to play a harder module. If you find things too difficult you can use the console to boost your stats or give you some extra levels to make it easier.

I dislike puzzles in games as I am not very logical in my thinking and I had no difficulty in any of the games (1 or 2) except for one puzzle in SoZ.

Puzzles are difficult to include when your target audience needs to be as large as possible. It's a role playing game first and foremost puzzles which prevent game play are likely to detract from the game in my opinion.

My suggestion is to buy the game and a soduku book and jump between the two as the mood takes you :D

That's referring to base weapon damage, see the link I posted. Say the PC and the enemy each have a longsword (which does 1-8 damage).

On Very Easy, the PC will always get an 8 and the enemy will always get 1-2.

On Easy, the PC will always get 5-8 and the enemy will always get 1-4.

On Normal/Hardcore Rules both the PC and enemy will get 1-8.

On Very Difficult the PC will get 1-8 and the enemy will get 2-16.

It does not affect spell damage or bonus damage on weapons or many other things.

This is all referring to the RNG -- there are other things like ranged weapons not provoking an attack of opportunity, potions not provoking an attack of opportunity, no critical hits on PCs, and harmful effects lasting for a shorter amount of time.
