Just a couple things I remember from my youth.
Stage Select: Highlight Sonya and push UP+START. You'll hear a pounding sound effect and the screen will shake. After you've selected your character(s), you'll be given the option to choose any stage you want. I suggest The Pit. It's the coolest looking pit and still doesn't require any more than a simple uppercut to trigger the stage fatality!
Secret Options Menu: In the options menu, you'll see a ? in the center of the option category. To access it, highlight the left-most option (I believe it's Game Configuration or something like that, whichever's furthest to the left) and PUSH AND HOLD BOTH BLOCK buttons and BOTH RUN buttons while also holding UP. (By default, this means holding both bumpers and both triggers + Up on the D-Pad) Do this for about 2 seconds and you'll hear the aforementioned pounding sound effect. Now you can access the ? options, basically allowing you to turn out some cheats. Most notably, one-button fatalities.
