I mean it was great in the first level, lot's of snails and bread, but now I'm on the third (stuck on the revolving teleporter puzzle) and I haven't found a single piece of food down there.

I'm wondering if food is going to be a pain in the ass later in the game. You have some hefty penalties for starving.
You don't actually get any penalties until a character's hunger meter completely runs out. When that happens, health and energy will stop regenerating. (You can't actually die of starvation)

If the game is anything like Eye of the Beholder, there's probably a "Create Food" spell you can eventually learn, that fills hunger meters.

I'm on the third level but I have gathered plenty of food... not sure what I am doing to get so much or what you are not doing to get so little. Sometimes there's food on the ground, I think, so just do some extra searching.

What difficulty are you on?
Normal difficulty. There isn't much food on the ground in my game, vast majority of my food came from the snails but that's almost all gone now. Have some bread left too but haven't found anything on the third level yet.

Enemies you kill there (spiders, the green-stuff-shooting guy, the mushroom) don't spawn any food.

And while it's true you cannot die of starvation, the problem is you cannot cast spells. And I guess you won't be able to swing weapons either since everything needs energy.

Then again maybe I'm worrying too much. But there's a clear lesson for me - if it takes me 10 or more minutes to figure out a puzzle, then reload saved game and do it again quickly.
I'm on the third level, I'm running a full party of Minotaurs, and I have yet to run into any issues with food. If anything, it's abundant.

On Hard, if that's relevant.

The mushroom looking monsters will sometimes leave edible items behind; I received 1 or 2 and found about 3 more on the first level.

I'm on the fifth floor.. or fifth basement? .. but food comes and goes pretty regularly. I'm a stockpiler, but every time it starts to get sort of low I find a cache. As long as you're not eating TOO much and not dilly dallying around, wasting time, food shouldn't be a problem. Then again, a lot of hunger will accrue if you need to wait to regen after battles. In other words, if you're getting hurt too much, get better! :)
