So I was reading the sticked mod guide but that seems to be focused on Icewind Dale, not Icewind Dale 2. Do the same mods (or similar) work on IWD2 such as the increase in resolution and whatnot? Or no?

While not officially supporting higher resolutions, the IWD2 config file will allow you to set resolution of 1024x768, 1600x1200, and 2048x1536. As far as the widescreen mod goes, yes it works with IWD2. Be warned, however, that whether you use the widescreen mod or not, there are two areas where the game will crash/freeze on Win7 if you're not using the 800x600 resolution (at then end of the Fellwood, and after you exit from Z'Hinda Citadel). If you save the game prior to these two areas and change to 800x600 resolution, then play through them, you can change your game back to your desired resolution and continue on without problems.*

*Not sure if this will present issues with the widescreen mod.
