I've tried switching the resolution a few times and it just doesn't seem to stick.

What am I doing wrong?

Hm, try this and if it doesn't work, post back:

in Gothic.ini change:
extendedMenu=0 to extendedMenu=1

and then change these to desired resolution (in this case 1280 x 1024):
"zVidResFullscreenX=1280" and "zVidResFullscreenY=1024"
