Let me explain this GOG vs Steam thing in respect to Gothic series.
Gothic 3:
GOG: There are legal aspects allowing GOG to update the game with
unofficial patches, that fix a great number of bugs and improve the game, so that you - the player - won't have to worry about anything else - patch 1.75 that is.
Valve: Most probably signed a contract of a different nature, that let them sell the game with the latest
official patch, which is 1.6.
That's why Steam version of G3 needs to be updated manually to 1.75, or it may perform poorly and clunky.
Gothic 1 / 2:
There are no differences between the game versions, and unless "Steam community in-game" option is enabled and might interfere with the game, I don't think it won't work.
I got GOG version on the games, but I ran them through Steam client, and I had no problem whatsoever with it.
That being said, GOG version is DRM free, and you actually
buy the game, not rent it.
