If you're talking about newer games like Trine, etc., I'd say it's a pretty good bet. If you're talking about classic titles like Shogo: MAD, it's highly unlikely. Usually ports of older games were handled by third-party developers and third-party publishers working under completely different terms with the IP owners of any given game.
If GOG were to try to handle the distribution rights to those ports, they'd have to negotiate a whole other set of contracts, potentially with the port's developer, the port's publisher, and the IP holder again for the rights to redistribute them, which would be a legal nightmare given that some porting companies like Loki Games and MacPlay have gone under.
And *then* GOG would have to deal with updating, patching and supporting the port. So yeah, I really don't see that happening. There are plenty of games though that have open-source ports which run in Linux/Mac, and there are others which run fine in WINE or CrossOver; you can see my GOGmix for some examples:
