I'd recommend you to start with TOS, indeed. If you're ready to forgive the old special effects and the occasional goofy plot (though that can be said of each iteration), that's the best way IMO to start enjoying ST, you'll get a good basis to understand the overall franchise. As you may guess by my avatar, I love TOS, I did grow very fond of the cast in that series, watching them adapting and developing their characters on the fly. :)

BTW, have you seen any of the ST motion pictures (either based on TOS or newer ones)?

I've seen Star Trek and Into Darkness films. Although, I've been told that the best Star Trek films are the even numbered ones and the odd numbered ones suck, or vice versa, I can't remember...

The former, though I like Star Trek: The Motion Picture (the first of the ST movies). It's usually considered slow, even dull at times, but I think it fits well the core values of the series. In fact, I felt in love with ST because that movie, didn't watch TOS and the other series until later. ;)

The best TOS movies IMO are the second one (The Wrath of Khan) and the fourth one (The Voyage Home), the third one (The Search for Spock) isn't so great like those two ones, but very entertaining anyways. Beware the fifth one (The Final Frontier), the plot is so goofy like those early episodes of TOS I told you about! You may watch it as a curiosity but don't expect anything from it. Then, the sixth one (The Undiscovered Country) was criticized by some ones because of the already aging cast, but I consider it worthy and a fitting end / swan song for the TOS saga).
