I'm looking to gift a friend one of the five games I'm going to pick for the current sale. However most of the documentation I've read seems to suggest that a gift order wouldn't produce 5 codes for 5 different games, but 1 code for all 5 games. Is this the case?

Yes, this is the case. The only way to do it is if you already own the game you want to give away. If that's the case, then you can give the duplicate game to your friend by giving him/her the bundle code (after redeeming the others for yourself). Otherwise you either have all the games added to your own account or you have to give all of them away.

Correct. You will only get one gift code. The only way to gift your friend a single game, is to pick up a game that you already own on GOG. You can then redeem four games yourself and gift the fifth one (with the same code) to your friend.

So as I understand what has been said, if I bought 4 games I don't have and 1 game that I did, I would still only get 1 gift code for the 5 games. But after using that 1 gift code, it could still be used again to redeem that 1 game I already have?

Yup. You might be able to contact gog support and get them to put the games you want to give your freind into a separate code though.
