Military strategy: Panzer General with some user campaigns
Adventures don't last for a year. A nice tactical shooter with a long single player campaign huge maps (especially outside) would be nice, but I am not aware of any. So another strategy game would be an option (e.g. Settlers), but also a sports management & simulation game.
maybe something like ghost recon could work as shooter.

Well, the ARMA series fits your description. Not sure how much single player content there really is in the newer ones but the original Operation Flashpoint (the only campaigns in the ARMA series I've actually finished) had a huge amount of single player content. Also the in-game editor adds virtually infinite content. You have no idea how many hours of my life I've wasted on creating missions or just goofing around in the editor.
Ok the no internet access is killing me because I could choose just one as long as I can access mods.

#1 "Skyrim- Legendary Edition." - I've already got so many hours in this I can probably sleepwalk through it, but what makes it THE best game (IMO) is all the great mods. There's still all the main quests etc, but you can add so much, it's almost like a whole new game.

With my #2 I'm still a little screwed though because it's a constantly developing Alpha game... "7 Days to Die"

#3... Something like a CK2 or Dominions 4 that takes a long while to learn the ins and outs of. (or maybe a "Rise of Flight" type game)

Me, too... there's even a link right on the steam game page for it from the devs. I didn't play 1 second before I had that up and running... but you know, it's just a bejeweled game with boobs right?

You don't even need to download it. As far as I know, the patch can be created by renaming an empty text file.
