My last attempt at this is apparently too long to work on the new GOG, so I'm recreating it and splitting up the list into multiple posts, I just hope it's in small enough pieces to handle additions later.
GOG now does show on the game page if the game contain more languages than English, but not for all games that do so. Some games has fan-made translations which GOG of course does not account for, and some games require manual editing or renaming of the games' data files which - again - GOG doesn't inform of (instead simply saying the game's only available in English).
With these points in mind, I think there's still a meaning to this list.
I'll update this first post continuously as new information is revealed (that is, by you). If the version here on GOG only supports English, but you know of a fan-made translation, please link to it. Anyone who adds relevant info that is not already added will get a positive rating, it's not much but it's a little thanks for helping out.

These all list games that either include a specific language, or has a translation patch for that language. They are created and kept up to date by the respective attributed user, not by me.
* Italian: AaronAmoth's Italian GOGmix has been hit by a bug, removing all its content, twice. Until GOG fixes said bug, he likely won't be recreating it again.
* Portugese: Jogos em Português Brasileiro (Games in PT-BR) (Kowagaru)
* Spanish: hensip's Spanish GOGmix has, similarly to AaronAmoth's, been emptied.
* German: Spiele auf Deutsch (Lafazar) - Likely won't update until said GOGmix issues have been fixed

* Changes only text, not speech, the intro doesn't seem to have any text at all

* You chose the language each time you start the game (English is default, at least in my case, with an English system).
* Choice changes both text and speech.

* Strangely enough, the intro movie is spoken in the text language.

* Change by clicking the flag in the options
* All are present as both text and audio.
