Make a new account and buy the games again. Or wait, since I think the Galaxy developers said they may add the ability to clear playtime and/or achievements, but I'm not sure if I recall correctly.
Just wait a while... by all reports it will most likely happen by itself eventually :P

Yes, they're stored online. A year ago players even suffered from server side resets, especially in The Witcher 3.

Unfortunately, it still isn't possible to clear anything from client side, despite the fact that this feature was announced a long time ago.

However, you can add your vote in GOG's wishlist:

Contact support and wait for them to do it, and then they never will after promising you it will be done in a few days.
