My GOG Galaxy client updates occasionally, downloading an ~87MB file and installing. However, the version as reported in top left title bar, remains "GOG Galaxy 1.1.5 (beta)" no matter how many times a new update has downloaded.

Where do I check to see what the latest version should be?

1,15 beta seems to be the most recent version. Have 1.15 here without experiencing the updateloop you are having. Using Windows 10 here and running galaxy with normal user rights (not as admin)
Maybe they just aren't changing the visible version number with minor updates.

It's updating correctly. All those updates are legit, but they don't affect the client side, which is why the client's version remains the same. More info can be found in the following post:
