Because you are purchasing a product on the promises of its marketing department, which is an iffy proposition on the best of days.
Think about why the company offers you a bonus if you buy their product without taking a look under the hood, or without anyone else having been able to take as much as a peek either.

Think about why you want that game now instead of either in two weeks when reviews have trundled in, or in a month, when the major bugs have been fixed, or even in a year, when the game with all DLC is on sale for 25% of the original price lacking that DLC. Which people that bought Day 1 will most likely have bought at full price as well, or now feel cheated because patient people got the whole package at a fraction of the price.
Because post-order is always better than pre-order.

Pre-ordering is no different. Granted, one caveat is that pre-ordering is from a time when physical copies were finite. Today the practice carried over into the digital realm where it’s pretty unnecessary.
