I'm a huge Sci-fi fan and have seen every Sci-fi show ever created for TV, so I'm bound to forget a few in a big list.
Therefore, I'll restrict myself to exactly three recommendations:
Babylon 5. It is the second best show of all time for me (after DS9).
Firefly. Witty humour, enough said.
Battlestar Galactica. Sci-fi for adults, with deep characters and great art style.

This is what everyone says about Firefly. Is nobody just going to come out and say it? Fine, I'll say it.
JESUS CHRIST the women in that show were gorgeous. Christina Hendricks was a guest star and she didn't stand out in the looks department. Christina Hendricks.
Good god that show was full of eye candy. And I'm pretty sure Pat Robertson hated it with an undead fire because If Nathan Fillion or Alan Tudyk wasn't turning you gay, Sean Maher definitely was.

Ugh, I get so sick of seeing people say Firefly and the new BSG. Those are seriously horrible shows and even worse as sci-fi. Utter JUNK all around.
LEXX isn't great but it's way better than those things ^ and a lot of other stuff mentioned, so I'll mention it too. Unique, crazy, not rehashed junk. There's a handful of these books. 2010, 2061, and 3001.

Andromeda is one of my favorite tv shows. I love the beginning plot, and the characters so much. I know a lot of people don't like it. Once the main writer got kicked off mid season 2, it got to be the "Captain Hunt" show, which I did not like, since the character dynamic between them was so amazing. But I am still so very fond of it. I've been playing FTL lately, and the plot of that game goes almost perfectly. I'm writing a mod that changes all the names and aliens to those on Andromeda. :P
I also love Red Dwarf, my favorite tv show of all.

By the way. Can anyone explain me why we currently have a trillion historical sword and/or sorcery ongoing series (involving rome, vikings, merlin, and whatever gameofthrone-likes they can think of) and zero space opera scifi since BSG ?
