I want to buy Divinity: Original Sin Enhanced Edition but the mac version has not ETA defined.

Anybody knows if I buy it now I will be able to download the mac version when it arrives?

Yes, you will. You don't purchase games per system, buying the game gives you access to the installer for all systems (current and future) that GOG has/will have it available for.

Larian (the developers) have stated that the Mac version should be released sometime this month. Assuming their words end up being true, then the you should be able to download the Mac version when GOG receives the Mac build from Larian.
