Vince DiCola - Escape
Basil Poledouris - the Kitchen
Jeremy Soule - the one they fear
audiomachine - blitzkrieg
Two steps from hell - strength of a thousand men
Nathan Grigg deserves mentioning. Solid, high-quality score for any game he's worked on with the intent to write interactive music for interactive media.
What he did to FEAR series is comparable to what Alan Silvestri and Brad Fiedel did to Predator and Terminator, respectively - gave it distinctive shape with memorable theme and cranked up emotional intensity of any scene to 11.
John Williams
Hans Zimmer
Vangelis

Daniel Lanois
Jeremy Soule
If you are talking video games:
Frank Klepaki (Act on Instinct and the rest of the C&C soundtrack)
Ken Allen (the awesome theme to Space Quest)
Koji Kondo (Mario and Zelda music)
Geoff Knorr (the epic soundtrack for Civilization VI, especially Australia and Scotland)
Tommy Tallarico (Earthworm Jim 2 anyone?)

And for films:
John Williams (Star Wars, Indiana Jones, far too many to list)
Alan Silvestri (Back to the Future and more)
James Horner (Titanic, Apollo 13 and others)
Hans Zimmer (Backdraft, others)
Elton John (Circle of Life and the other good songs from The Lion King)
Game music, all of them.Well,I mean if you play and play them enough they all grow on you.Even the Gog forum music has finally found a place in my heart and I have to say it wasn't easy listening.
I don't care much for movie soundtracks, other than maybe John Williams (Star Wars) and Howard Shore (Lord of the Rings).

So here are the game ones:

Kevin Reipl (UT 2003 & 2004):
example Probably the best track from the whole UT series period.

Jesper Kyd (UT 3, MDK 2):
example The extended version of this is so much better.

Damjan Mravunac (Serious Sam TFE, TSE, BFE):
example Best track from BFE is ironically a TFE remix.

Bobby Prince (Keen, Doom, Duke 3D):
example My favorite from Duke 3D

Frank Klepacki (C&C Series):
example We all know Hell March so enjoy Grinder :)

Kiril Pokrovsky (Divnity 2):
example I picked a little atypical one for Kiril here but just because I personally love this one.

Jesse Harlin (Star Wars: Republic Commando). Because when you create an in-universe language just for a game soundtrack, you are a badass:
example None other than Vode an.

There is probably more but don't want to spend more time than I already did making this list :P

EDIT:
Michiel van den Bos (Unreal 1, Overlord 1&2):
example Love the Overlord theme. Pure awesomeness.

Michail Anatolievich Kostilev, a.k.a. Lind Erebros (new King's Bounty series):
example All the tracks are just incredible and perfectly fit a fantasy world. I recommend looking up King's Bounty: Dark Side soundtrack. The music has been accumulating since the first one and this one has them all.

It's actually illegal to praise Jesper Kyd without mentioning Adventures of Batman'n'Robin on SEGA - culmination of his work's golden era.

Great choice - loved their Tom&Jerry theme adaptation (also original tunes like T2) on NES

Since Gauntlet has been mentioned, I'd like to point out Hitoshi Sakimoto & Masaharu Iwata that worked on Gauntlet IV score. Some of the tracks are near orchestral level of epic, considering all the limitations of hardware it's made for

timppu: ...Alan Silvestri...
I'm surprised at how many times I'm intrigued by a soundtrack, only to search for the composer, and discover that of course, it's Alan Silvestri
