So I've never beaten an Obsidian game or a Fallout game. I've played one of Fallout 1, 10 hours or so of fallout 3, 10 hours of fallout new vegas, and 20 or so hours of Fallout 4.

But these were always on Steam.

Just wondering what mods or patches are already on the gog version, and what other mods are recommended to have bug free, and also importantly stutter free experience?
IIRC, the only patch I know of for the GoG version is the 4GB patch so I'd say you'd want most/all of these at the least

NVSE
New Vegas Anti-Crash
NV Stutter Remover
JIP LN nvse plugin
Yukichigai Unoffical Patch

Optional

Updated Ogg Vorbis libs
Weapon Mesh Improvements:
Collision Meshes:

GoG wont let me post links, so you're gonna have to search for these. NVSE has its own site and the rest are on the New Vegas section of NexusMods

GOG version is already 4GB aware.
In addition to the list TehGuy posted, I'd recomend:

New Vegas Restoration strip and interiors restorations
Freeside Open (improves Freeside area)
Darnified UI
Ojo bueno or poco bueno texture pack and/or NMC texture pack
Use ENB to improve visuals (I use ENB of the Apocalypse)

Use the Fallout Mod Manager to install and organize your mods.

Yeah, I meant to say it's already included but somehow managed to not do that at the same time
I went with these for my first F:NV experience, and had a very bug-free, stutter-free and crash-free experience:

(1) Script Extender
(2) ENBoost CTD / Memory Patch
(3) Stutter Remover
(4) Yukichigai Unofficial Patch
(5) Vanilla UI Plus
(6) NVAC - New Vega Anti Crash
I'll make it simple: everything by this guy (in order). It's an Adventure that starts really small, and ended up covering a huge story with múltiple characters and at least as long as the original story

You're in luck!

GamerPoets has created a tutorial vid that answers your exact question, with specifics about the gog version of FNV. According to him some things you otherwise would need to install such as the 4GB patch are unnecessary with the gog version as it comes with that applied.

UPDATE:

Uh oh. Looks like I can't post links probably because I'm a new user. Just search for the GamerPoets YouTube channel. This is the name of the video:

Fallout New Vegas | FPS & Stability (definitive guide)

Hope it helps.

Can you confirm that this fixes the game?

FO3/FNV both were built on the aging gamebryo engine, and neither game runs 100% stable, but the above posted mods reduce crashes enormously! So not "fixed", but "improved" a lot.
NV has the same mild annoyance as my Linux version: The scroll bar is too thin on the PIP-Boy.
