I am determined to make a knife-throwing ranged weapons expert with Fallout 1. I already completed the game once with small guns and this time I want to try something not usually attempted. Does anyone know if there are any areas that restock any and all throwing ranged weapons? Are they restocked at the hub?

If anyone knows of locations which would aid me in this, that would be cool.

I tried something similar many years ago. There is, unfortunatley, a severe lack of throwing weapons in the game. I don't think the developers considered someone making Throwing their primary combat skill. I would suggest augmenting your throwing arsenal with flares and rocks in the beginning. I seem to remember getting quite a few throwing knives from the Khans base. Once you have plenty of knives you can start throwing them around, but watch how many you have and be sure to not leave any behind. I would also suggest beefing up your Melee skill and using the throwing knives as knives when it makes sense. So don't thow them at a rat 1 hex away.
