I don't port games often so this is new to me. I can only launch Fallout from the shortcut in the files, and when I do, I get the "play, read me, tech support, exit" option screen. If I press play, I'm met with an error message "An illegal instruction was executed at address 004d3391" and it only gives me the option to terminate the application.
I'm using a MacBook Air M1 2020.
Any help on what to try moving forward would be great, thank you all.

Just to make sure this is the GOG version of Fallout 1 right?

I ask because I only see a Windows version available for download. This is no Mac or Linux option at all.

The game store/review page also only lists Windows (7, 8, 10) under "Game details"

I'm also not an expert on MacBook. So ignore my comment if I got it wrong and it's a Windows based system.

I got it working on macbook pro 2012 with the Wineskin app from --> https://github.com/Gcenx/WineskinServer
(i used manual install)

Using latest engine / wrapper, the game installs and runs fine.

I used these advanced options;
map option as alt, and cmd as control (this only worked on the right hand side of keyboard)
standard function keys (F1, F2 etc.)
shutdown nicely
under screen settings -> auto determine gpu on (gpu boost optional, didn't seem to make a difference for me)
i also ran a directx installer to confirm it had been done and then i installed the censorship fix from moddb. :)
