As of recently, I now own Morrowind on GOG. Because of that I also own Arena and Daggerfall too. But I have a quick question, since I'm totally new to the Elder Scrolls series: which of the three should I play first?

Should I just play them in order, for the sake of story? Or does story not matter as much? If the latter, then I might just jump into Morrowind. (with the most "important" mods)

They all play very differently. And all 3 of them have quite a big worlds.

Daggerfall has the biggest game world I have ever seen. But controls will take some time getting used to.

Morrowind is smallest of all 3 but it is the most detailed game (much less of various random factors, all NPCs are unique, all quests are unique, etc.).

Arena... worth checking !if! you enjoyed Daggerfall and didn't play it yet.
I think I'd play Morrowind first - and I wouldn't be overly concerned about modding it, initially. All TES games take place in the same world, but there is no preferred sequence to play them storywise.
The huge game worlds of Arena and Daggerfall are somehat artificial as these huge game worlds are largely empty space with not much going on there. You'll spend most of the time in towns and dungeons.
The game world of Morrowind is comparatively small, but it's not empty. I still enjoy simply travelling though this marvellous scenery with its exotic people, animals and plants. You find jungles, grassland, mountains, beaches, swamps, small islands along the coast, whatever you like, with big cities and small villages, strange temples, caves, tombs, etc. I never measured how long a round trip of the isle of Morrowind takes, but I guess it's a couple of hours real-time (without doing anything but travel at normal speed).
You start in a small village, Seyda Neen. From there you can either familiarize yourself with the game there (quests, a small starter dungeon, explore the area around the village) or go straight to Balmora, a big town, if you prefer civilised places or want to follow the main quest. By the way, you can do what you want - you don't have to follow the main quest, and the game world is interesting enough even when you ignore the main quest completely.
Be prepared for a slow start, but then you need some time to get used to the TES world, too.

I would also recommend to start with Morrowind.
All of the games are huge and have vast landscapes that can be travelled, but the different regions in Morrowind are handcrafted - in contrast to Arena and Daggerfall, where you walk random generated scenery and get even random generated dungeons on your way.

While several places might look a bit barren (which suits the overall feel of the game, by the way) each region in Vvardenfell has a unique appearance regarding land form, plants, wildlife, architecture, and weather.
I still remember being awe-struck during my first rambles. Everything was new and exciting and to some degree alien (like the giant mushrooms, the various ruins, and the settlements of the different races.

Later, after I had explored all of the island, I used some mods to add things, that I thought were missing or might be useful. But, as much as plugins may add (like trees, plants, wildlife, buildings, etc.), they also take something away - something of the special exotic beauty of Morrowind and it's matchless look and feel.

Already made up my mind that I'm not starting with Arena, after watching LGR's review of it. Rather, I'll follow the advice here and start with Morrowind. BTW the only mods I plan to use are bugfix mods such as the Code Patch, which I have already installed.
