I know this is an old thread, just thought i would post how i got it working for anyone else looking.
Go to Applications > Show Package Contents > Contents > MacOS > GOGLauncher. If you launch GOGLauncher from the Application and select Deeper Dungeons as you normally would, it would work since the launched is not launching through Dungeon Keeper and you should be able to play it.
Also, to change to high res textures press alt + r ingame. Originally when i changed to high-res textures the game slowed down so i had to change a file to fix that issue, if you or anyone has the same issue let me know and i will post how to fix it.

Find and open up dosboxDK.conf (in your DK GoG folder) and change the 'cycles' value from '80000' to 'max, that should fix the lag.
