EDIT: Wow, I'm an idiot. I just figured it out: you have to choose the episode when you start a new game. Whoops, sorry about that, folks. (I really wish there were a way to delete this forum post...)

I have Ultimate Doom installed, which should contain Episodes 1-4, namely "Knee-Deep in the Dead", "The Shores of Hell", "Inferno", and the later-added one, "Thy Flesh Consumed".
However, I just beat the last level of Episode 1, it shows the ending message referencing The Shores of Hell, then the credits, and then it goes back to the main menu.
How does one access the latter 3 episodes?
