Hi,
is it possible to buy an upgrade from DIVINITY: ORIGINAL SIN - ENHANCED EDITION to DIVINITY: ORIGINAL SIN - ENHANCED EDITION Collectors Edition ?

In short: no, GOG doesn't offer any upgrade.
I suspect this is because the D:OS EE Collector's Edition contains two copies of the game (you get a bonus code for another copy of the game).

If you still can take advantage of the "money back guarantee", you could ask support to give back your EE copy to have your money back as store credit and then buy the Collector's Edition. If you bought the game more than 30 days ago, the "money back guarantee" is over for you, but you can try to contact support anyway.

No. There was a separate upgrade DLC for the original release of the game, but not the EE.
The in-game items are included in the EE for everyone, and the soundtrack, design documents and art pack are only available as part of the Collector's Edition.
