I was checking the system requirements and according to the store page on Gog, the only supported OS are Windows 7, 8 and 10, but pretty much every other store say it also works on XP and Vista...

Is that a mistake or there's something different with the Gog version?

I have the download version from Matrix, and at least this version works even on an XP PC.
Distant Worlds: Universe is essentially a compilation re-release of the base game + all 3 full expansions slightly modernized to run on 64bit hardware.

DW:U I have the Steam version, via the Matrix website store. Will be buying the GOG version before the Christmas 2017 discount ends.
Steam version of Distant Worlds will run standalone without Steam client started.
Both versions definitely work on Win7/8/10, and both versions should run on WinXP.

Yes, this does work on my Windows XP machine
Honestly, I don't expect the Gog version to be any different from the others. It's far more likely that Gog stopped supporting XP and Vista altogether since Galaxy doesn't work on them.
My concern however is that by trying to play it with an unsupported OS I won't be eligible for tech support and/or refunds. So before taking the plunge I'd love to know if anyone managed to get their Gog copy to run on Vista...

Yes, the GOG version.
I would add that I am puzzled that it is not advertised as such and I wonder why.
