That is because GoG Galaxy by nature is an automated system for updating similar to how Steam does it. But for offline Installers, GoG developers have pack the update into an executable and then QA test it, this will take time for them to do, and they don't work weekends.
Socratatus: Unfortunately there has always been some kind of silent agreement between GOg and other games companies that non- Galaxy patches come out later. You have to be patient.
Remember people chained on Steam have to live with that to get things quick. We who use non_Galxy GOG have to wait. I`d rather wait than be on some DRM where I might not be able to play my game because Steam decides I can`t.
It all works out in the end.

But for offline installers, GoG developers have to take the update, pack into an exectuable file, QA test it, and then release it, and they don't work weekends. So that is why there is lag, all logistics.
