So I tried other space shooters and I should know how to play the genre, but I find this a bit too difficult in a weird way.
Whenever I'm flying, the kilrathi ships always end up behind me. I try to turn around by flying upwards or turning, but I can't find them, unless the ships are flying into my 12 o'clock view.

Also, when I fly the Longbow and the Thunderbolt, they extremely hard to maneuver. They refuse to nose up and only turn a little bit. I usually die flying these crafts.

Please help?

I usually try to keep a good distance to them. Otherwise I just keep doing as you, spin like crazy to try to get them in my crosshairs.
So accelerate away from them so they're some distance from you before you turn and get them in your sight.

Another easy thing to miss is the speed throttle. Try to fly slower. If you go to fast when dogfighting you'll just speed over, under and beside them.
Instead of following the direction the enemy is taking, try moving in the opposite one. If he's climbing - bring your nose down. Moving around yourself is the best way to (eventually) line up shots.
Also - target jump a lot. If the enemy your trying to get is difficult to shoot down, shift target to another enemy which might be closer and you might get behind easier.

And yes, the Longbow especially can be painful to dogfight in (the Thunberbolt is actually quite good with its gun array) - but a tip is to use your afterburner as speedboost while turning.
And try to not climb/dive as much as turn left/right as well as it's faster in that direction.
Also with those - use your turrets as well - switching to them fast to get a tailing enemy off your back and then back to the front can help.

And if all else fail - alt+o and change the difficulty a bit until you get the hang of it.
I've only played WC3, but in that one you don't want to tail an enemy for too long. The target begins to act as a diversion while his wingman comes up behind to safely attack you. Like the previous poster said, shift targets often. If things get too hot, hit the afterburner and get away from the battle to recharge/repair.
I suspect his problem may be more than just the sluggishness of those specific ships. I had similar problems when using keyboard only controls. I know it's not just the ship I am flying because when I switch to using the mouse, the controls are significantly more responsive.

Does anyone have any idea how to make the keyboard controls more responsive?

also, the game does not launch full screen. any tips on this?

I can't help with keyboard controls, but hold alt and press enter to go to fullscreen. If you want it to start in fullscreen; edit your dosboxWC3.conf file using notepad. The file is in the folder you installed WC3. Change the line "fullscreen=false" to "fullscreen=true" minus the quotation marks and save.
