It's a regular mac app you double click from the Application directory and you add a shortcut to on the dock.
Just choose unlisted program, new virtual drive, name the drive (like wbc3gog), choose install additional libraries, 32 bit installation, check "POL_install_gdiplus", browse for the downloaded wbc3.exe *like from the desktop), and you're ready to go!
Fullscreen is sometimes weird on games, so I typically go for "Config Wine", then setup a windowed game (smaller than your computer's screen) during the 'check "POL_install_gdiplus"' step.
PlayOnMac is very robust, so you can mess up completely and you'll be OK with a redo. Plus you can install multiple copies, with each pointing to different desktop integration locations, so as the program gets updated you can test it without trashing your heroes. (Some changes to wbc3 have been pretty drastic.)
WBC3 is the one I'm most familiar with, and it very occasionally crashes randomly. Seemingly during launch or during very long, big battles.
Check the PlayOnWine support list for "officially" supported programs, and the web for other workarounds. And you can try stuff on your own. Plus the program is built to run with other windows apps. It's pretty freakin sweet, actually.
