How do I change the keyboard controls?

You need to run the setup.exe in DOSBox. This thread sort of explains it. If you know what you're doing in DOXBox, you can change to the game's directory and simply execute the file.

I emailed GOG, they gave me this very simple workaround which worked :)

[i]You can try this workaround:
Right-click the game App file and select to Show Package Contents, navigate to Contents > Resources and right-click the Wacky Wheels.boxer, select to Show Package Contents, in C Wcky Wheels.harddisk you will find the WW.EXE and SETUP.EXE files, if you change WW.EXE to something else and SETUP.EXE to WW.exe launching the App should bring the setup. Reverting the name changes will make the game launch again.[/i]

For future reference, an even easier option would be to just drag the setup.exe file onto the dosbox.exe icon. That will launch setup.exe without having to change any file names.
