Does either GOTY or Editors Choice have sp content or are they only online deathmatch games?

They both have some kind of single player mode where you have to go through several tiers that include different game modes (death match, team death match, CTF etc.) with a boss tier leader at the end.

Pretty much like playing any practice match with bots, what do you expect?

The only diff is the 'single player' is a pre-defined sequence of maps and game modes with an interface shown between the levels which shows your progress after each win.
What's probably most notable is that you're treated with a scripted scene of a "Trophy room" flyby after you beat all the levels in a given game mode.
